Serving Up Cordillera Style

The Clubs of Cordillera Ranch debut three menus with new flavors and fresh ideas.

The culinary team, inspired by Executive Chef Isaac Cantu, has collaborated and embraced new ingredients from local purveyors to redesign the Breakfast Menu, C-Star Ranch Menu and Signature Dining Menu. 

BREAKFAST MENU
Available in the Main Dining Room:
Saturdays and Sundays, 
     9:00am to 2:00pm
Available in Twin Sisters Lounge:
Saturdays and Sundays, 11:00am to 2:00pm
All-day Breakfast Menu available with the C-Star Ranch Menu.

The most important meal of the day is breakfast and there is no better way to enjoy it than watching the sun rise over the Guadalupe Valley. Here are two highlights from the updated Breakfast Menu. 

HUEVOS RANCHEROS TOSTADA   

Two eggs pan fried, spiced home fry potatoes, crisp flour tostada shell, refried black beans, traditional tomato ranchero sauce, cilantro chimichurri

CORDILLERA MONTE CRISTO   

Griddled or fried, shaved forest ham, Swiss and cheddar cheeses, raspberry jam, powdered sugar, crisp potato fries

C-STAR RANCH MENU
Available in the Main Dining Room and Twin Sisters Lounge:
Tuesday-Thursday from 
     11:00am to 9:00pm
Friday-Saturday from 
     11:00am to 10:00pm
Sunday from 11:00am to 8:00pm

As the main menu of The Club, it was important to hold on to the classic and monthly features while bringing new dishes and twists to familiar favorites. Enjoy the energy of the Twin Sisters with great food and casual engagement with your friends. In the dining room, relax with new culinary delights designed to showcase the season. Here are highlights from the new C-Star Ranch Menu.

WEDGE SALAD

Baby iceberg lettuce, applewood bacon lardons, Roquefort bleu cheese, crisp “tobacco” shallots, house buttermilk dressing

“ICE COLD” CEVICHE   

“Bloody Maria” shrimp or citrus ponzu ahi tuna, cucumber, sweet peppers, jicama, crisp tortilla, yucca chips

GRILLED PETIT N.Y. STEAK 

Cordillera “Three Pepper” rub, herbed butter, crisp truffle fries

NATURAL ROSEMARY CHICKEN ROTTI  

Oven-roasted half chicken, whipped garlic mashed potatoes, agave-glazed carrots, Boursin butter

SIGNATURE DINING MENU
Available in the Main Dining Room and Twin Sisters Lounge:
Thursday from 5:00 to 9:00pm
Friday-Saturday from 5:00 to 10:00pm

Using only the freshest locally and nationally sourced ingredients, the newest items that comprise the Signature Dining Menu are perfectly paired and Chef-crafted with passion. Seafood is selected fresh from the boat and given top priority to land in Chef Isaac’s hands to personally fillet. Akaushi beef yields the perfect steak with the most incredible color, texture and marbling. Sauces are exquisitely created to complement each dish. Welcome to the Signature Dining Menu!

EAST COAST LOBSTER TAIL

Oak-smoked New Zealand venison, butternut squash soubise, braised escarole, rosemary-apple confit, red shallot demi glaze
