Join us for an intimate dinner featuring special guest Ryan Hill of Hill Family Estate! Ryan will discuss the various flavor profiles while Chef Isaac Cantu crafts a custom menu to pair with these remarkable wines.

After decades of farming grapes for some of Napa Valley’s finest wine producers, including Silver Oak, Insignia, Far Niente, Ramey and Duckhorn, Doug Hill and family decided to begin producing wines for their own label. In 2001, Hill Family Estate released their first vintage.

The Hill family began to select and plant their own vineyards in the 1980s, using their intimate knowledge of the multiple Napa Valley microclimates, soil variations and the many subtle growing factors which influence the characteristics of the grape and the resulting quality of wine. As growers and vintners, their goal is meticulous attention to vine growth and optimum fruit production, allowing each variety at each location to fully mature to its peak potential. The Hill family’s constant pursuit of excellence in vineyard management and winemaking allows them to produce wines which beautifully express the individuality and depth of character in each varietal. From the romance of the label to the time and dedication put into each bottle, the Hill family invites you to share their wine.

Hill Family Estate Winemaker, Alison Doran

Winemaker Alison Doran joined the Hill Family Estate team and made the inaugural 2001 vintage. Alison was introduced to Doug while he was growing grapes and she was making wine for Lewis Cellars. Doug loved Alison’s style, personality and determination to produce the finest wines possible. Alison developed this skill while being mentored by renowned wine expert Andre Tchelistcheff, completing a degree in winemaking from UC Davis and spending time in the legendary winery-filled region of Alsace, France. Today, Doug and Alison work closely together selecting the highest quality grapes and producing ultra-premium wines.

The Hill Family Estate Wine Dinner will take place on Thursday, September 21, 2017 in the Cabana Dining Room. A Reception at 6:30pm is followed by Dinner at 7:00pm. For reservations, please contact The Club reception desk at 830.336.9000.

Shafer Wine Dinner

The Clubs of Cordillera Ranch welcomes Shafer Vineyards, a family-owned winery that crushed their first Napa Valley Cabernet Sauvignon grapes in 1978. The Shafer family moved from Hinsdale to the Stags Leap District of Napa Valley in 1972 to start a business in the California wine industry. Their first vintage, 1978 Shafer Cabernet (later named Hillside Select), won the San Francisco Vintners Club Cab taste-off, as well as first place in a 1993 German blind tasting against world-class first-growth Bordeaux wines. And that was just the beginning. In the words of famed Wine Critic Robert Parker: “…the quality of the wines soared to first-growth standards… no wine produced in the world over the twenty plus year period (1983-2013) has scored as consistently as the Shafer Hillside Select…”
