Dive into Poolside Dining at the Swim Club

By:
Albert Guerra, Dining & Pool Manager

Dining poolside at The Clubs of Cordillera Ranch is a sun-soaked escape into Hill Country luxury with a splash of laid-back elegance. Perfectly perched on one of the highest points on the Ranch, overlooking the Guadalupe River Valley, the Swim Club offers awe-inspiring views and a casual atmosphere for entertaining. From Tuesday through Sunday, noon to 8:00pm, members can unwind beside the sparkling pool while enjoying a menu that’s as refreshing as the setting itself.

The offerings strike a perfect balance between light, flavorful fare and indulgent treats. Think loaded nachos for the table, glazed BBQ ribs for a hearty appetite, ahi tuna bowl for a lighter snack, and a trio of sorbets and fruit for a refreshing treat.

With summer in full swing and temperatures rising, the Pool Snack Bar has become a go-to spot for cooling down. Located at the north end of the Axis Patio, it features a variety of menu options, including refreshing cocktails, plus a soft-serve ice cream option that has been a hit with both kids and adults. This dining experience is perfect for all ages and provides a refreshing treat during these hot summer days. For adults, El Norte is a convenient spot to grab cocktails while enjoying the Vista Pool.

In between indulging in fresh bites and cool treats, the energy shifts from relaxed lounging to lively laughter as daily games kick off by the pool. Both kids and adults can engage in spirited rounds of duck races, corn hole and table tennis, or
prize-winning games like free throw challenges and limbo contests where kids can earn pirate coins redeemable for snacks at the concession stand. The fun flows as easily as the drinks! On select evenings, everyone can stick around for Name That Tune or Flick N’ Float Movie Nights.

So, whether you’re lounging with friends, watching the kids splash around, or soaking in the Texas sun with a chilled cocktail in hand, poolside dining here feels like a mini vacation without ever leaving the Ranch. And when the sun sets, the experience can shift from flip-flops to fine dining with the Signature or new Ranch menus in the Main Dining Room.
