Vino and La Vista

As spring approaches, our personalized wine dinners provide a time to celebrate friendships, and to toast to our shared love for good food, good wine and good company. At every one of our dinners, we invite our membership to create a once-in-a-lifetime experience with our beautiful Texas Hill Country views as a backdrop. 

Many of our members love the concept of our Club wine dinners, and now you can host a private wine dinner with your friends and family any day of the week! We work with Wine Specialist, Jeff Cohen, to pair the wine of your choice with a truly customized meal prepared by our culinary team. Our focus is based on an exclusive experience, offering favorite wine brands such as Far Niente, Jordan, Shafer and others.

To elevate this experience, we set up a family-style table along the dining terrace, overlooking our Jack Nicklaus Signature Golf Course and Guadalupe River Valley, and providing scenic views and an elegant ambience for you and your guests. The evening begins with a reception cocktail hour before moving into dinner for the evening. These extraordinary, multiple-course meals are always themed around your favorite winery, season, recipe or cultural experience, and crafted by Executive Chef Isaac Cantu. During the dinner, Jeff will speak about each remarkable wine in detail.

Last fall, we were able to host a corporate outing for member, John Long, who chose to include one of our personalized wine dinners. We featured a menu of Seared Mero Seabass Cucumber “Capellini,” Smoked Texas Quail Croquette and Pink Peppercorn-Crusted Venison Loin. During the dinner, the Long group was able to enjoy breathtaking views and a picture-perfect sunset.

Our annual leadership meeting in the fall has been at Cordillera Ranch for the last five years. Everyone loves attending and comments on the beauty of the Ranch and the Hill Country, and the friendliness of the staff. We reserve all of the Lodges and everyone enjoys the “Ritz Carlton” feel and amenities. Camille is always fun to work with to select cool, new items for everyone attending.

In 2022, Jessica offered a new concept of a personalized wine dinner. Since we love wine, this was a natural fit! Jessica, Jeff Cohen and Chef Isaac worked with me on the food courses and wine pairings. Everyone loved this new way of dining. We dined outside on the #1-hole championship tee box. While it’s no longer there, it was a spectacular venue in which to dine as the sun set. Jessica is awesome! – John Long

A long-standing interest of mine has been the benefits of using honey and bee keeping. I have enjoyed honey since I was a child and there are many benefits of having honey in your diet. Honey contains a variety of nutrients, it’s rich in antioxidants and is better for blood sugar levels than regular sugar. Research has shown it to promote heart health, promote burn and wound healing, and help suppress coughing with children.

From watching golf tournaments on TV with my family to going out to the driving range with my dad during my High School years while on the Golf Team, everything I associate with golf has been positive. I decided to attend the University of the Incarnate Word and major in Fashion Merchandising with a concentration in Business. Fusing both my passion for fashion and love for the game of golf, the golf merchandising path was the perfect path for me.
